How To Cure Sweet Potatoes

How should you cure your sweet potato harvest? Have you ever cooked freshly harvested, home grown sweet potatoes only to find out that they are not that sweet? It's because they haven't been cured yet - or specifically, they haven't had the time and the right conditions to convert all those starches into sugars. • In this video, I will talk about how to cure your sweet potatoes to ensure a tasty harvest! • Best method possible: • Place the Sweet Potatoes in a high humidity/high heat (80-90 degree) climate for 2 weeks • Then place them in a cooler climate condition 55-70 degrees for up to 6-8 weeks. • This ensure the absolute sweetest sweet potatoes - in other words, all the starches have been converted to sugars. • My method (faster/easier and works fine!): • Rinse potatoes gently and leave wet. Place them for 4-10 days in a humidity bag (any cooler bag should do) in 80-90 degree heat. • *You could eat them now and they will taste very good!
