Brush the mushrooms with kitchen paper to remove any compost from the surface. Large flat mushrooms can be peeled, but will cook well with the skin in place too. • 2. For closed cup and flat mushrooms, twist out the stalk, or using a small sharp knife to cut out the stalk. • Large flat or field mushrooms • 1. Cook on a griddle with a little oil and a sprinkling of garlic. Season with pepper and sizzle 5-6 minutes each side. • Closed cup mushrooms • 1. Remove stalks and tear the mushrooms into small pieces. • 2. Marinate the mushrooms in ginger, oil, lemon.... to add extra depth to the dish. • 3. Heat a pan, no oil add to the pan and sizzle the mushrooms for 5-6 minutes. • Button mushrooms • 1. Cook whole. Melt a little butter in a small non-stick saucepan. Season with black pepper. Add the mushrooms and cook over a high heat for 5-6 minutes.
