Healthy Chocolate Chip Cookie Recipe! • Ingredients: • • 1/4 cup softened coconut oil • • 1/4 cup sun butter (or nut butter) • • 1/3 cup coconut or brown sugar • • 1 large egg • • 1 tsp alcohol-free vanilla extract • • 1 + 2/3 cup fine almond flour • • 1/2 tsp baking soda • • 1/2 tsp salt (I used Himalayan pink salt) • • 1 cup chocolate chips (use pure chocolate for paleo, I used enjoy life allergen-friendly dark chocolate) • Instructions: • 1. Add the oil, Sun Butter, and coconut sugar to a large bowl and beat until combined. • 2. Scrape the sides of the bowl with a rubber spatula and beat in the egg and vanilla extract. • 3. Scrape the sides of the bowl again and add the remaining dry ingredients except for the chocolate chips. Beat until combined. Fold in the chocolate chips. • 4. Refrigerate 2+ hours or overnight. • 5. Roll dough into even balls (my size made 20) and space evenly. (I recommend pressing them down gently and top with sea salt!) • 6. Bake for 10-12 minutes at 350F (times will vary depending on oven). The outer portion of the cookies should start to brown. • 7. Allow cookies to cool on baking sheet for 5 minutes before transferring to cooling rack with a spatula.
