Enter the jungle of Green Beans in my kitchen garden! All varieties of Common Bean, such as these climbing Green Beans, belong to the species Phaseolus vulgaris, a herbaceous annual plant originally domesticated by indigenous people in Mesoamerica approximately 8000 years ago. Most of the colourful dry beans used in cooking are simply the dried seeds of fully mature Common Beans. • The beans shown in the video are Cobra (light purple flowers), Hunter (creamy flowers, and Cosse Violette (dark purple flowers), which are Green Bean varieties selectively bred for their delicious unripe pods rather than the beans inside. These are climbing or pole beans which means they grow upwards in a vining manner rather than forming a bush. The video includes a photo of the interior structure of the bean frame made from bamboo poles, garden hose, and zip ties. • These Green Beans are a perfect vegetable for many kinds of cuisine, such as the salmon nicoise salad shown at the end of the video.
