INCREDIBLE HARVEST PIZZA RECIPE

Fall is in full force. Halloween is behind us and the holidays are ahead of us. Thanksgiving is a mere three weeks away. Insert gasp here! Time to do something delicious and fall tasting to sustain us in our meal and menu planning for Thanksgiving! This harvest pizza will fit the bill. Topped with rich, fall flavors, this pizza starts with my pumpkin pizza sauce and doesn't end there. I know you are going to love this spin on a classic! • As many of you know, we have pizza night in our house almost every Thursday. This week was no exception. Only this week we had made the pumpkin pizza sauce and this became a monster. It all started with Rick asking if we could come up with a Halloween pizza. You know I rolled my eyes, but then the wheels started turning and we have ended up here. A pizza that is nothing like any other pizza you have ever eaten and it is so delicious you simply won't believe it! • This starts with a pound of my homemade pizza dough and then some of my pumpkin pizza sauce. I used an Italian blend cheese that had mozzarella, Parmesan, provolone, asiago and romano cheeses. Started with a base of shredded cheese then went on to add delicious flavors that we thought would go well together and they certainly do! They included sauteed mushrooms, roasted red peppers, pan seared chicken, caramelized onions and topped off with a bit more shredded cheese and some dollops of creamy ricotta. • This was baked in a skillet that I preheated on the stove then added a bit of olive oil and placed the stretched dough into. This helps to set the bottom of the crust so it will get super crispy. Then the pizza was built on top. It was baked in a 450 degree oven on top of my pizza stone, in the skillet for 12 to 15 minutes or until melted and beautiful. • When the pizza came out of the oven I drizzled with just about a tablespoon of extra virgin olive oil as well as some dried rosemary. This gave a fragrant finish to the pie. I allowed the pizza to rest for a few minutes before slicing into 8 pieces and enjoying. • Hands down, this is a rich and delicious pizza with luxurious flavors that will make you happy.
