Try it out and let me know how you like it! 😋🇵🇷 • #Pasteles #PuertoRico #PastelesRecipe #Cerdo #Pork #Boricua #PastelRecipes #Delicious #Holidays #HolidayRecipes #Recipes #Food • Cerdo for Pasteles Recipe • Ingredients: • 3 lbs. of pork • 1 diced onion • 1 diced green pepper • ½ cup of sofrito • 1 cup of tomato sauce • 2 tsp of granulated garlic • 1 tsp of cumin • 1 tsp of paprika • 1 tsp of oregano • 1 tbsp of salt • ½ tsp of thyme • 4 cups of chicken stock • 3 tbsp of olive oil • Instructions: • 1- In an instant pot, pan or pot, brown the pork. • 2- Once all the pork is browned, add all the peppers, onions, and sofrito. Saute on medium high heat until translucent. • 3- Add tomato sauce and seasonings, mix until well incorporated. • 4- Add chicken stock and pressure for 40 minutes on high. • 5- Once 40 minutes has elapsed, open and check for seasonings. Make sure the meat has tenderness to your likeness. • For Pasteles: • Ingredients: • 3 lb. Grated Yuca • 1 cup Grated Calabaza • 1 cup Broth • ½ cup Annatto Oil • 1 cup of coconut milk • Salt to taste • Black Pepper to taste • 1 t Granulated Garlic • 1 tbsp of homemade sazon • Chickpeas (Garbanzos) • Roasted red Peppers • Olives (Aceitunas) • Pork or Chicken for stuffing • Waterproof paper • Banana leaf • Instructions: • 1- Place the grated yuca in a colander, strain the liquid. (If it is dry out of the package, rinse with water and drain again to get the starch out so the pastel is not gummy). • 2- In a bowl add the grated yuca, grated calabaza, seasonings, annatto oil, coconut milk and cerdo broth. Mix until well incorporated. • 3- In a small frying pan, fry a little bit of the dough to make sure seasonings are correct. Once you like the seasonings, it is now time to build. • 4- Heat up the banana leaf, you can do this on a griddle or gas stove. This is to release all the oils, chemicals on top and make it more pliable. • 5- To build the pasteles, you will need your heated-up banana leaves, waterproof paper, annatto oil, string, a brush and of course all of your ingredients in separate bowls. • 6- First, we’ll start by getting the waterproof paper, putting a banana leaf towards the bottom of the paper then brush the annatto oil on the leaf to make sure the pastel doesn’t stick to the paper. (See video for Demo) • 7- Then grab a portion of the masa to your liking (depending on how big or small you want your pasteles). • 8- Place on banana leaf and flatten into a rectangle shape, you don’t want it to be too thin though. • 9- Add your pork/stuffing in the middle and any other fixings, chickpeas, red peppers, prunes, raisins, olives, etc. • 10- Bring the bottom of the paper towards the middle and gently press. Then roll firmly all the way up. Tuck the sides of the paper towards the center of the pastel and repeat process. (See video for Demo). • 11- Grab two pasteles in their papers and place them together, tie them up to your preference or watch video for demo. • 12- Cook in salted boiling water for 35-45 minutes fresh, if frozen cook for 75-90. • 13- Enjoy!
