Pancit Bihon is a Filipino dish of stir fried vegetables with noodles. It is good with just about everything; as a main dish or as a side dish. This recipe is completely vegetarian. If you prefer a little meat you can brown ground beef, pork or turkey with the garlic and ginger or add cooked chicken, fish or shrimp just before adding the noodles. • The noodles can be: saifun (bean thread), maifun (rice vermicelli) or bihon (corn starch). • The vegetables will cook down but if you don't have a large enough skillet you might want to cut the recipe in half or smaller to accommodate your cookware. Also, pancit freezes well. Just put the desired portions in freezer bags, label, date and freeze lying them flat. • Recipe. • 1 Package cellophane noodles • Soak noodles in cold water. • Heat 2 tablespoons oil. • Add: • 1 teaspoon coriander seeds • 1 teaspoon cumin seeds • Fry the seeds for about a minute before adding other ingredients. • Add: • 2 to 3 table spoons minced garlic • 1 tablespoon grated ginger • 1 onion (sliced) • Cook for one to two minutes or until the onions begin to turn a little clear around the edges. • Add vegetables in order of how long it takes them to cook. Always use fresh vegetables. Canned or frozen vegetables just don't work well. • 1 cup green beans • 1 cup carrots (You can purchase pre-shredded carrots in most grocery stores.) • 1 cup shredded broccoli ( Look for pre-packaged broccoli slaw in the produce section of your grocery store.) • Cook until vegetables start to soften. Stir as needed. • Add: • 1 cup zucchini cut into matchstick size pieces. • 2 cups shredded cabbage • Cook until cabbage is all shiny and just starts to turn clear around the edges. Don't over cook. • Add: • Drain the noodles. Cut the noodles with your kitchen scissors directly into the vegetables. The noodles are often one long noodle so cutting is a must. Trying to cut them on a cutting board with a knife is a mess. Stir until distributed throughout the vegetables. If you don't stir enough they will clump. Cook them until the are soft and mostly clear. • Add: • 1/2 to 1 cup soy sauce as desired. (Alternate sauces: fish sauce or tonkatsu sauce) • Stir until evenly absorbed by noodles. • Add: • 1 teaspoon Sriracha sauce (Add more or less depending on how spicy you want it.) • Stir until hot sauce is evenly mixed into the pancit. • Refrigerate or freeze leftovers.
