Greek homemade pork gyros, a professional recipe by my dear friend George Karagiannis, writer of numerous gastronomy books. With George, we've also co-written my first book that features 20 selected grill recipes (in Greek). • These recipes need a precision in ingredients, especially of spices (analogy and amount), that's why the amounts are given in grams (oz) precision. • The difference in this attempt is the alternative way of roasting; grilling horizontally on charcoals, in small spits. It's a gyros to be made at home.
