My father was raving about this amazing pasta they had on their trip to Italy, so I was tasked with trying to recreate it. Came out so delicious, giving me deep flavourful lobster bisque vibes with nice chunks of lobster meat and al dente noodles to mop it all up. • • INGREDIENTS • Lobster Tails • Lobster Claws • Garlic • Onion • Carrot (for stock) • Tomato Paste • White Wine • Fresh Thyme • Unsalted Butter • Fresh Pasta • Dry Spices • • PREPARATION • Par cooked the lobster tails 5 minutes to release the meat from the shell (we will finish cooking them in the sauce). Crack and peeled shells, removing meat, and shells to the side. Re check the meat for any shards or anything etc. • • COOK • Large aromatics browned and then added the shells, herbs, lobster poaching liquid for added flavour. Let simmer on low for 4 hours, once reduced by 1/3 strained into a smaller pot and left to keep reducing all afternoon. Olive oil in the pan, brown off the diced onion, then minced garlic. Add a knob of butter to brown, dry spices and tomato paste - cook a while until dark and sticky. Deglaze with white wine, cook out the alcoholic then add the concentrated Lobster stock. • • FINISH • Combine pasta with extra pasta water, the sauce with the meat, continually stirring over the warm burner to let the pasta keep cooking and absorb the sauce to land at al dente. • • 🍝 @palmapasta • . • • . • • . • • #pasta #Lobster #seafood #foodie #Dinner
