I did a few simple mods to my backyard offset smoker and it cooks much better now. Check out my video on the tuning plate setup • Brinkmann Tutorial Series - Tuning Pl... I added tuning plates, charcoal basket, and high temp silicone around the doors. These mods should work on similar offset smokers as well.
