Seriously, I could eat breakfast food for every meal and never get tired of it. This Egg, Sausage and Potato Scramble is filling, quick, affordable, and it tastes so darn good! Watch my tutorial to see just how easy this recipe is. • Let’s start with the potatoes. Simply peel, dice, and toss with some oil and seasonings. Bake them until fork-tender. Fry up the sausage, and add in the potatoes, onions and eggs. Once everything is cooked through, toss in some shredded cheese, and stir until it’s melted. Place the scramble in a serving dish, and top with more cheese (you know I love my cheese, y’all!), some green onions and cherry tomatoes. This dish is perfect for brunch or breakfast.
