Fragrant rice preparation with lots of fresh vegetables. • TAHIRI • Ingredients • 1½ cups basmati rice, soaked and drained • 5-6 small potatoes, peeled and halved • 12-16 cauliflower florets • ½ cup green peas • 2 tablespoons oil • 1 teaspoon cumin seeds (jeera) • 10-12 cloves • 10-12 black peppercorns • 2-3 black cardamoms • 1 inch cinnamon • 1 bay leaf • 2 medium onions, sliced • ½ teaspoon turmeric powder • 1½ teaspoons red chilli powder • 1 teaspoon cumin (jeera) powder • Salt to taste • Fresh coriander sprig for garnishing • Method • 1. Heat oil in a deep non-stick pan. Add cumin seeds and let the seeds change colour. • 2. Add cloves, peppercorns, cardamoms, cinnamon, bay leaf and onions, mix and sauté till onions turn translucent. • 3. Add potatoes and cauliflower florets and mix well. Add turmeric powder, chilli powder, cumin powder and salt and mix. • 4. Add sufficient water, mix, cover and cook for 5-6 minutes. Add rice and mix. • 5. Add green peas and mix well. Add 3 cups water, stir to mix, cover and cook till fully done. • 6.
