This time I'll be making hand pies which are basically meat pies and it looks delicious • This recipe is from the Heroes' Feast (Dungeons Dragons): The Official D D Cookbook and if you want more like it please consider buying a copy of your own. • Simplified Recipe • For 4 6 inch hand pies • 6 slices thick-cut bacon • 1 large (8 ounce) yukon gold potato peeled and cut into 1/2 pieces • 2 leeks, white and green parts, halved lengthwise and thinly sliced • 1 tablespoon of finely chopped fresh thyme • kosher salt and freshly ground black pepper • 4 garlic cloves finely chopped • 1 pound ground beef • 3 tablespoons all purpose flour • 2/3 cup low sodium chicken broth • 1/4 cup chopped fresh parsley • Pastry for 2 double crust pies • 1 egg • ketchup, grainy mustard, or steak sauce to serve (optional) • 375f oven • 1) In a large skillet over medium heat fry the bacon turning over as needed until well rendered and lightly browned about 13min • 2) Transfer bacon to paper towels to drain and reserve • 3) Measure the rendered fat and reserve 2 1/2 tablespoons • 4) Return 1 1/2 tablespoons to the skillet set over medium high heat and add the potato stirring occasionally until it softens after 7min • 5) add remaining 1 tablespoon of bacon fat and add leeks, thyme, 1/2 teaspoon of salt, and cook while stirring for 4min • 6) add garlic and cook while stirring for 1min then scrape into a bowl and set aside • 7) Add beef and cook breaking up clumps for 4 or 5min until it starts to loose color • 8) lower heat to medium and add flour stirring for 1 or 2min • 9) add broth and 3/4 teaspoon salt and cook for 2min • 10) move mixture into bowl with the potato mixture then stir • 11) let cool until warm (about 20min) • 12) crumble the bacon and add to bowl with parsley then stir. Add slat and pepper to taste • 13) Roll out a quarter of the dough and cut into a 10 by 8 inch oval • 14) Place 1 cup of the filling mixture at the narrow end leaving about 1 1/2 inch border around the edges • 15) Moisten the dough with water and fold over into a half moon shape pressing edges and cutting X on top to vent • 16) use egg and 1 tablespoon of water to make egg wash and brush on • 17) bake until golden brown and crisp 40 to 45min rotating half way through • 18) cool for 5 to 10min on a wire rack and serve hot with a ketchup, grainy mustard, or steak sauce on the side • Pie crust • 5 cups all-purpose flour • 2 teaspoon kosher salt or use 1 teaspoon fine sea salt (You can just eyeball) • 2 tablespoon sugar, optional • 2 cup of butter cut up (460g) • 16 to 32 tablespoons cold water (Just add until the texture is right) • Combine all ingredients into a bowl and smush together slowly adding water until texture is right. • Roll out with rolling pin • • Today we will be doing a chatting zatsudan!
