Ingredients (Serves 2. The video is made with double the amount) • 1 cup basmati rice • [Marinated chicken] • 1 chicken thigh • 3 tablespoons yogurt • 1 teaspoon chicken broth powder • 1 tablespoon curry powder (or garam masala) • 1 teaspoon cardamom powder • 1/2 teaspoon nutmeg powder • 1/2 teaspoon cumin powder • (Marinade up to this point) • 5g butter • 1/2 clove garlic and ginger grated • A pack of midi tomatoes (any tomatoes will do) • A pinch of salt, spread thinly and evenly over the tomatoes • 1/2 bunch of coriander • Mint (if you have it), to taste • [Aromatic whole spices for boiling rice] • 3 cloves • 3 grains black pepper • 1 bay leaf • [Topping for steaming] • 4 tablespoons of fried onions • Cashew nuts and raisins as desired • Directions • Chop the ingredients. Cut tomatoes into chunks, chop stems of coriander, cut leaves into chunks, and cut chicken thighs into bite-sized pieces. • Marinate the chicken. Rub the above marinade ingredients into the chicken and leave to marinate. • Measure and drain basmati rice. • Add the grated garlic and ginger to the butter and cook over low heat. When fragrant, add the tomatoes, sprinkle with salt, and increase the heat to medium high. After a while, the water will come out. • Add the marinated chicken and coriander stems and simmer. Simmer gently until thickened, then turn off the heat. • If possible, boil water at the same time. Add the whole spices and bring to a boil. If you do not like to eat the whole spices directly, remove them here. (We eat them as they are.) • Boil the basmati rice in the fragrant water for 5 minutes and drain. • Layer cashews, rice, fried onions, raisins, mint, and coriander leaves in a frying pan with curry. Cover and steam over low heat for 15 minutes. If it looks like it is going to burn, turn off the heat and let it steam in the residual heat. • Give it a quick stir and it is ready to serve! • Compared to a few years ago, biryani has become much more common in Japan. And I think I have a much better idea of what it is like.
