Meskouta (Moroccan Orange Cake) • A traditional orange and yogurt cake served for tea or breakfast. Easy to make. • 1 cup = 250 ml • Ingredients: • All purpose flour-2 cups ( 260g) • Baking powder-1 1/2 teaspoon • Salt-1/2 teaspoon • Egg-4 ( at room temperature) • Sugar-1 1/4 sugar- 250g • Orange zest -1 tablespoon • Oil- 1/2 cup (110 ml) • Orange juice-1/2 cup (110 ml) • Yogurt-1/2 cup • For glaze: (optional) • Orange juice-1/2 cup • Powdered sugar- 1 or 2 tablespoon • Method: • Sift flour, Baking powder and salt. Mix and keep aside. • Beat egg for 1 minute. Then gradually add the sugar. • Whisk until pale and fluffy, • Add oil, orange zest and yogurt. • Add the flour mix in 2 or 3 batches. Gently mix until combined. • Prepare the baking pan.
