This scallion oil chicken will always bring back the feeling of home 😌 It’s a versatile stir fry dish that can be added to any Chinese home cooked meal. Simple yet so comforting, a bowl of white rice is a must! • Ingredients: • 250g boneless chicken leg, cut into big chunks • 1/2 brown onion, sliced • 3-4 slices of old ginger • 3 stalks of spring onions (separate white stems from green leaves) • 180ml water • Chicken marinade: • 2 tbsp light soy sauce • 1 tbsp oyster sauce • 2 tbsps shao xing wine • 1 tbsp thick caramel dark soy sauce • 1 tsp white sugar • White pepper (optional) • Steps: • 1. Marinate the Chicken: • Mix the light soy sauce, oyster sauce, shao xing wine, dark soy saucem white pepper, and sugar together. • Add the chicken chunks and let them marinate for at least 1 hour. • 2. Sauté Aromatics: • In a pan, heat some oil and sauté ginger, scallion stems, and onions until fragrant. • 3. Cook the Chicken: • Add the marinated chicken to the pan and cook until the pieces start to brown. • Pour in any remaining marinade and the water. • 4. Add Scallion Leaves: • Stir in the scallion leaves and cook until they are wilted and the chicken is fully cooked. • 5. Serve and Enjoy: • Best served over a bed of steaming rice.
