Japanese Wind is another one of those wonderful, juicy and rich cakes that you can serve to even the most discerning. • Very easy to prepare, with a rich hazelnut flavor, the Japanese wind is one of the classics of our time. • The recipe dates back to the last century so it is proven to be good. • Of course you can also replace hazelnuts with ground walnuts, but this variant with hazelnuts is fantastic. • Meringue crusts are prepared in the same way as for an icy wind.
