Made with semolina flour, these pan-fried breads have a dense, chewy texture and are great with honey, cream cheese, or amlou. They also freeze well - just reheat them in a fry pan straight from the freezer! • Get our Moroccan Sweets cookbook at https://www.wanderlustvoyagestravel.c... • Ingredients • 2 cups all purpose flour • 1 cup semolina flour • 2 teaspoons salt • 2 teaspoons sugar • 1 teaspoon yeast • 1 ¼ - 1 ½ cups warm water • ¼ cup olive oil • ¼ cup butter, melted • To Finish • Additional semolina for sprinkling • Additional oil for the pan • Directions • Make the Dough Combine the AP flour, semolina, salt, sugar, and yeast in a large bowl. Add 1 cup warm water as you begin to mix with your hands to create a dough. Continue adding water until it comes together into a ball. • Turn out onto a lightly floured work surface and knead thoroughly for about 10 minutes, until you have a smooth and elastic dough. • Portion the dough out into 8 pieces (12 if you would like the msemmen to be smaller), and set on an oiled plate. Cover with plastic wrap and allow to rest for 30 minutes. • Fold the Msemmen Mix the melted butter and olive oil in a small bowl. Pour some additional semolina flour in another bowl, and keep both by your work surface. Spread a bit of the oil mixture on your work surface. Working with one ball of dough at a time (leaving the others covered so they do not dry out), use your fingers to spread the dough very thin. You should be able to see the work surface beneath it. Don't worry if there is a small tear. • Using your fingers, spread more of the oil mixture over the dough. Sprinkle thoroughly with semolina flour. Fold the dough into thirds like a letter, overlapping the two sides over the middle so you have three layers. Turn 90 degrees, then repeat the process. This will give you a square with nine layers. Cover with plastic once more and repeat with remaining dough pieces. • Cook the Msemmen Heat a cast iron pan over medium heat and add a generous drizzle of oil. Working from the first piece of dough you folded, use your fingers to flatten the square until you have a thin layer. Place in the pan and fry until golden, about 3 minutes, then flipping to cook another 2 minutes. Remove to a paper towel lined plate to drain off excess oil.
