In this week’s video we get you ready for your Memorial Day BBQ with some Baby back ribs. • First, remove the membrane on the back of the ribs. This makes for a more tender rib and allows for our rubs to penetrate the meat. • After the membrane has been removed, drizzle the back side with a little olive oil to help the rub stick. Apply an All Purpose Seasoning (salt, pepper, and garlic). Flip the ribs over and repeat. Once the All Purpose has been applied, season with BBQ Rub, again starting on the back and work your way to the front. • I let the ribs sweat for about 30 min while I get the cooker hot and up to temp. We had our Myron Mixon G33 running at 250* for this cook. • Once the smoker had stabilized, the ribs were placed on for two hours with Hickory and Cherry as our wood of choice. • At the two hour mark our ribs had all the color they needed. We brought them inside and prepared our wrap. In our wrap was just some of our Original BBQ Sauce and a little bit of our Original BBQ Rub. The ribs were placed in meat side down and double wrapped in foil. • Once wrapped we got them back on the smoker. They will take another 2-3 hours depending on the thickness of the ribs. We cook our ribs to feel more than internal temperature. Once we could pretty easily twist the bone and saw the bone disintegration we knew they were done. • We brought them inside and applied our glaze of Original BBQ Sauce, starting with the back.
