This is my Nonna's recipe for the most irresistible, delicious and gorgeous-looking Italian peach cookies, also known as pesche dolci ! My Nonna always filled her peach cookies with Nutella, she never used yellow food coloring, and she never hollowed out the cookies before filling, which makes this one of the easiest peach cookie recipes ever! • I've included steps on how to hollow out your Italian peach cookies, if you'd like them to hold more filling, as well as some other filling options! I have also provided some substitutions for the alchermes - and an alcohol free option!
