We made a video in our test kitchen that shows you how to clean, trim, cook and store Morels: • Contrary to popular belief, it’s fine to wash mushrooms. One doesn’t want dirt or pine needles to interfere with your dining experience! It’s not a question of if, it’s when to clean: scrub Morels to remove as much debris as possible, and if necessary, rinse with a bit of cold water or quickly dunk them immediately before trimming and cooking - the water will cook off. • How do you trim Morels? • It’s simple: Just cut off the rough ends of the stems, then slice in half vertically. Or, how can cut them horizontally into the shape of nickels to maximize surface area. As with all wild mushrooms, we advise cooking for at least 10 minutes to help prevent illness. • There are several ways to cook Morels. In our video, we dry sear first to drive out the water, then sauté in butter with shallots and garlic. • You can also roast them. Toss with shallot butter and spread onto a sheet pan, then into a 450 degree oven for around 10 minutes or until they start to darken.
