Boeuf Salad • This salad is a tradition in our house for all holidays, Easter, Christmas and New Year. The traditional way to make is with meat such as beef or chicken but O make mine as a side dish to our holiday meal with only veggies. This salad is usually made with dice root vegetables, mayo and mustard. I think the best part is of course you can use your artistic talents to decorate as much as you want. And of course is so tasty. Most unusual for most American tables but oh so worth making. I am sure you are going to love it! • Every time I make this salad I think of my mother in law and how proud she will be watching me make this recipe. • Ingredients: • -4 large Russet potatoes • -3 parsnips • -2 stalks of celery • -3 carrots • -1 cup green peas • -Yellow onion - small diced • -3 dill pickles diced • -2 1/2 beef bullion cubes or beef broth 1 carton of 32 oz. • -water to boil vegetables ( 6 cups) • -parsley (optional) • -red pepper (optional) • -tomatoes (optional) • -2 hard boiled eggs (optional) • -season salt (optional) • -salt and pepper to taste • -green olives and Kalamata olives • -2 cups of mayonnaise • -2 1/2 tbsp. of yellow mustard • -roasted red peppers (optional) • For the topping to the salad: • -1 cup mayo • -1 tbsp. of mustard • Thanks for watching, be creative.
