How to make the Ladyfingers / Broas / Sponge Fingers / Savoiardi Biscuits • Ingredients: • 3 Eggyolks • 1 tsp Vanilla • 1/3 cup Sugar • 1 cup Flour • 1/2 cup Powdered sugar (for dusting) • For Meringue: • 4 Egg whites • 1/4 tsp Cream of Tartar • 1/3 cup Sugar • Procedure: • 1. Mix egg whites w/ cream of tartar. Once frothy, add sugar. • If you mix eggyolk first, make sure mixer is clean and dry before you mix eggwhite. • 2. Mix egg yolks, sugar and vanilla until light in color. • to check if yolk is ok, try to make a figure 8 • 3. Gently fold the egg whites to egg yolks. Add flour. Mix well. • 4. Place in piping bag • 5. Pipe in a cookie sheet with parchment • 6. Dust with powdered sugar. • 7. Let it sit for 3-5 minutes before baking. • 8.
