Salted egg is a very popular ingredient in Asian country, especially in China. I love to preserved eggs myself to control the level of saltiness. The salted eggs need to be cooked before consuming. You can boil them like hard-boiled eggs, or you can mix with meat or vegetables for cooking. The white is really salty, but the yolk inside is a prized delicacy rich umami flavor. I like to eat them simple with some rice soup. Sometime I like to make moon cake from salted egg yolk for dessert. This method good for recipe that use whole egg.
