Braised Beef Shank Osso Buco Inspired Recipe Flavorpaul Dish

Slowly braised beef shanks with veggies, tomatoes, herbs and wine—all enriched by the deep marrow flavor—did I miss anything? This is my Osso Buco inspired recipe—the classic braised veal dish from northern Italy. • #cookthisnext #braisedbeefshank #flavorpaul #ossobuco • Ingredients: • 3 pcs beef shanks • 2 rib celery, diced • 2 medium carrots, diced • 1 medium yellow onion, diced • 5 cloves garlic, minced • 2 cups peeled tomatoes • 2 cups red wine • 1 cup beef stock • 1 tsp ground black pepper • 1 tsp salt • 2 tbs olive oil • Fresh parsley for garnish • Bouquet Garni: • Cheesecloth is usually used to wrap these ingredients, but this time I used a coffee filter which is a perfect alternative too. • 1 pc sprig of fresh rosemary • 1 bay leaf • 4 pcs cloves • 1 pc peeled garlic • • The Process: • 1. Heat olive oil in a pan in medium to high heat and brown the beef shanks for approximately 3 to 5 minutes per side then set aside. (Do it in batches to avoid overcrowding.) • 2. In the same pan, adjust the heat to medium low, and then sauté the celery, carrots, onions and garlic together for about 5 to 7 minutes. Then add the peeled tomatoes and keep stirring occasionally for another 5 to 7 minutes. • 3. Turn the back up to medium high, and then pour in the red wine followed by the beef stock, stirring occasionally to distribute all the flavors evenly. Bring to a simmer. • 4. Add the beef shanks in the pan. Cover and reduce the heat to low and cook for 45 minutes to 1 hour. After that, flip the meat and continue to cook covered for another 40 minutes or until the meat is tender. • 5. Serve in a plate and garnish with fresh parsley. • 6.
