Deliciously creamy and packed with earthy flavors—this Green Mushroom Masala Curry is a vibrant twist on comfort food! πΏππ • Green Mushroom Masala Curry that brings together fresh herbs and earthy mushrooms in a delicious, vibrant green gravy: • Ingredients: • For the green masala paste: • 1 cup fresh coriander leaves • 1/2 cup fresh mint leaves • 2-3 green chilies (adjust to taste) • 1 - Cup Raw Coconut • 10 - soaked Cashews • 1 tbsp - soaked poppy seeds • 2 tablespoons water (to grind) • For the curry: • 200-250g button mushrooms, cleaned and halved • 1 medium onion, finely chopped • 1 medium tomato, finely chopped • 1/4 teaspoon turmeric powder • 1 teaspoon garam masala • 1 teaspoon coriander powder • 1/2 teaspoon cumin powder • 1/4 teaspoon red chili powder (optional) • Salt, to taste • 2 tablespoons oil or ghee • Fresh coriander leaves, for garnish • Instructions: • Prepare the Green Masala Paste: • In a blender, add the coriander leaves, mint leaves, green chilies, raw coconut, soaked poppy seeds, soaked Cashews and water. Blend to a smooth paste and set aside. • Cooking the Mushrooms: • Heat oil or ghee or butter in a pan over medium heat. • Add mushrooms , turmeric powder, chilli Powder,salt . Saute for 5 min and transfer to another plate. • Add all Spices ,finely chopped onions and sauté until they turn golden brown. • Add the chopped tomatoes and cook until they soften and oil starts to release from the mixture. • Stir in the turmeric powder, cumin powder, coriander powder, garam masala, and red chili powder (if using). Cook for another minute until the spices are fragrant. • Add the Green Masala Paste: • Now, add the green masala paste to the pan and cook on medium heat for about 5-6 minutes, stirring occasionally. Let the raw smell of the herbs and spices disappear. • Cook the Mushrooms: • Add the halved mushrooms to the pan, along with salt to taste. Mix well, ensuring the mushrooms are well coated in the green masala. • Cover the pan and cook on low heat for about 7-10 minutes, or until the mushrooms are tender and cooked through . • Garnish and Serve: • Garnish with freshly chopped coriander leaves. • Serve the Green Mushroom Masala Curry hot with rice, roti, or naan. • Enjoy this delicious and aromatic dish!
