Preserved lemons are wonderful. Preserved bergamots are even better. Regardless of whether you call them bergamot oranges, bergamot lemons, or citrus bergamot, bergamots--which are actually an ancient hybrid between lemons and oranges--are great when lacto-fermented using the age-old Moroccan preserved lemon technique, lending the same flavor to the preserve as they famously do to Earl Grey tea. The technique couldn't be easier, requiring just the bergamot fruit (or, if you're wondering what to do with too many lemons, use those) and salt! I suggest using a wire bale jar and both salt and citrus juice are corrosive to metal lids. Since I'm in France, I use Le Parfait jars, which are also widely available internationally.
