Here in America it has become a trendy appetizer on many Italian Style Restaurant Menus. • Important Tip A True Polenta recipe should be placed in a pot of room temperature tap water and stirred constantly and added in slowly as the cold water keeps the cornmeal from forming lumps and becoming clumpy. • Polenta takes a long time to cook, simmering in four to five times its volume of watery liquid for about 25-35 minutes with near-constant stirring; this is necessary for even gelatinization of the starch. • The polenta can be conveniently matched with a medium red wine or also a Novello, obtained from whole grape fermentation, such as the Cabernet-Merlot, Sauvignon, Cabernet - Sauvignon, Barbera, Cabernet, Red Trentino, Red of Val d'Aosta, Sassella and Inferno • The Polenta.
