Today we bake Runeberg´s tortes • The original recipe is from Aitoa Arkiruokaa -blog and you can read it in Finnish there. :) • http://aitoaarkiruokaa.fi/runebergint... • I made 1,5 x this recipe and I got 16 (too) small cakes. • You need: • 200 grams/ 0,44 pounds butter • 2 dl / 0,85 cups sugar • 2 eggs • 2 dl / 0,85 cups flour • 2 dl / 0,85 cups breadcrumps • 2 dl / 0,85 almond flour/ ground almonds • 1 tea spoon baking powder • 1 grated orange peel and slightly orange juice or bitter almond aroma / bitter almond liqueur. (I added juice and aroma!) • Rom/ rum aroma • Raspberry jam • Icing sugar • Froth sugar and butter • Add eggs and froth more • Add dry ingredients and mix carefully • Add orange peel and juice and/or bitter almond thing • Put the dough to the cups • In the oven 180 C/ 355 F 20-30 minutes • Let them cool • Moisten the cakes with the rum or with the rum aroma + water + sugar mix • Decorate with jam and icing! • EAT!!!!!
