This post was supposed to take a different turn! A friend told me about shortbread biscuits made with goat’s milk butter, and I was already dreaming up sweet combos like honey or lavender—and even savory ones with herbs or cayenne. 🍯🌿 • But alas, the online order mix-up! What arrived instead? Goat cheese that looked almost identical to butter. Not the worst mistake (hello, crostini later this week 😋), but I found myself with everything prepped, except for the key ingredient: goat’s milk butter. • Thankfully, I had salted butter on hand, which is actually my go-to for shortbread. A touch of salt takes any cookie to the next level! If you don’t have salted butter, just add 1/4 tsp salt or skip it altogether if you’re not sure. • So, what did I do? I went ahead with really good, really basic shortbread. Because let’s be real, perfect shortbread is hard to beat: crisp, buttery, and incredibly moreish. I use the classic 1-2-3 sugar-butter-flour ratio—guaranteed success every time! As a treat, I dipped them in chocolate and sprinkled flaky sea salt on top. 🤤 • Want to switch it up?
