Prepare the bitter leaf: • Wash the bitter leaf thoroughly to reduce its bitterness. You can use warm water and a bit of salt to make the process easier. If you’re using pre-washed bitter leaf, skip this step. • • 2. Cook the meat and fish: • In a large pot, boil the assorted meats, stockfish, and dry fish with seasoning cubes, salt, and onions until tender. Ensure the stock (broth) is well-flavored, as it forms the base of the soup. • • 3. Prepare the thickener: • If using yam or cocoyam, boil and pound until smooth, or blend into a paste. If using yam flour, mix with water to form a thick paste. • • 4. Assemble the soup: • Add the palm oil to the pot of meat and stock. Allow it to simmer for 5 minutes. • Add the thickener (yam or cocoyam paste) in small lumps and let it dissolve as the soup simmers.
