Today, we are going to show how to make simple eggplant recipes, fried eggplant curry and eggplant stir fry. Both recipes are very tasty and can be served with a hot bowl of rice for dinner or lunch. • • 1. Fried Eggplant Curry • Ingredients • 3 medium size eggplant • 1-2 green chilli (can be adjusted) • 1 medium size onion • A thumb size ginger • 3-4 garlic cloves • Piece of cinnamon • ½ Tsp Turmeric • ½ Tbsp salt • 1-2 Tbsp cooking oil • 1 cup of coconut milk • 1 Tbsp chilli powder • 1 levelled Tbsp roasted chilli powder • Tsp mustard powder • 1 Tsp ground pepper • 3-4 cardamom • 3-4 cloves • 1 Tsp palm sugar • Process • 1. Season eggplant, refer to video for steps • 2. Fry seasoned eggplant 10 minutes in an air fryer at 180C, check halfway and turn the pieces over if required for consistency in cooking • 3. Once fried, rest them on a paper towel • 4. Add 2 Tbsp of cooking oil to a pan, add ½ a chopped onion and mix well • 5. Once onion starting to translucent, add pandan and curry leaves • 6. Add 1 ½ Tbsp garlic paste and 1 Tbsp ginger paste • 7. Add thumb-size cinnamon piece and mix well • 8. Add 2 cloves, 3-4 cardamom (slightly bruised) and mix again • 9. Add the following ingredients and mix well • 1 Tbsp chilli powder (this can be adjusted to your liking) • ½ Tsp turmeric powder • 1 Tbsp ground pepper • 1 levelled Tbsp roasted curry powder • 10. Once the spices are mixed well, add 1 cup of coconut milk. If you need more sauce, add a ½ cup of light coconut milk or water and bring it to a boil • 11. Then add fried eggplant, mix well, cover the lid and simmer under low heat for about a couple of minutes until the eggplant absorbs the sauce • 12. Add palm sugar and give a mix • 12. Once it is simmered to your liking, the dish is ready to serve • 2. Stir Fry Eggplant • Ingredients • 2 medium-size eggplant • 1-2 red chilli (can be adjusted) • A bunch of fresh coriander • 3- 4 garlic cloves • 2 Tbsp cooking oil • 1 Tbsp soy sauce • 2 Tbsp roasted sesame seeds • ½ Tsp salt • Process • 1. Add 1 Tbsp of cooking oil to a pan, once the oil is heated up, add already pound stir fry paste • 2. Saute until everything is soft and fragrant • 3. Add eggplant and mix well for even coating • 4. Cover the lid and cook for a couple of minutes for the eggplant to sweat • 5. Take out the lid and mix gently • 6. Add a little water to moist the pan and to avoid burning the bottom of the pan • 7. Add 1 Tbsp of soy sauce, gently mix and cook for a minute with the lid on • 8. If the eggplant needs more cooking, put the lid back on and cook for a few seconds • 9. Once the eggplant is cooked well, mix gently • 10. Add 2-3 Tbsp of roasted sesame seeds, mix gently, and the dish is ready to serve • Your support is very important for my channel to grow.
