Thermomix Quince paste made easy

Here I show you how to make a quince paste without any mess or fuss, using your Thermomix. • During this isolation period of Corona Virus Times, what else is there to do but cook. ;) • Here is my recipe for Quince paste - • Ingredients • • Approx 4 quinces, washed, peeled and cored • • 125mls of water • • Juice of 1 lemon • • Sugar • • Vanilla Essence (optional) • Method • Cut peel quinces into chunks and place in TM Bowl. Add water and lemon juice. • Cook on 100° C, Speed 1 until quince is quite tender (approximately thirty minutes). Puree mixture, speed 8 for 15 seconds and remove mixture from TM Bowl. • Activate the scales and weigh the pulp back into the TM Bowl. Add ¾ of weight in sugar and cook for 1.5 hours, 100° C, Speed 1 to 2 (depending on thickness. The thicker, the higher the speed). Replace MC with steamer basket placed on top to eliminate splashes. • For a darker colour (deep pink/red) and a firmer consistency, continue to cook at 100° C, speed 3 for another 30 minutes. • Pour into a tray, greased or lined with Bakers paper and store in fridge. Can also be poured into muffin tins so can be stored or given away in a round neat shape. Or as seen in video, use small round containers with lids. • When set, cut into pieces and wrap in greaseproof paper and then foil. Keeps indefinitely.
