Basic Risotto

Basic Risotto • Risotto is a hearty Italian classic--similar in texture to macaroni and cheese, and made with rice... but no cream! By slowly stewing the rice, starches are developed to create a meal that is rich, creamy, and satisfying! This basic vegetarian recipe is a blank canvas: delicious on its own, but can also be customized by adding in vegetables or cooked protein. • (Serves 2 - 3 as a main dish) • Ingredients: • 4 cups stock, plus 1-2 cups water if needed (featured: mushroom stock) • 1 Tablespoon butter • 1/3 - 1/2 cup finely diced shallot (onion may be substituted) • 1 1/2 cups short grain rice (featured: carnaroli. Substitute: arborio, baldo or sushi rice) • (NOTE: Long grain rice can be substituted, but the results will not be as creamy) • 1 lemon, zested and juiced • Pepper (to taste) • Salt (if needed--do not add if your stock already contains salt) • 1-2 Tablespoons finely minced parsley (reserve some to garnish) • 1/4 - 1/2 cup grated fresh parmesan cheese (reserve some to garnish) • Method: • In a small saucepan, heat stock and keep warm. Stock should be just warm enough for steam to rise, but not so hot that it comes to a boil. • Meanwhile, in a large skillet over medium heat, melt butter and saute shallots until soft. Add rice and cook until it turns slightly clear. Reduce heat to low. Add lemon juice and just enough hot stock to barely cover the rice. Stir frequently until stock is almost completely absorbed by rice. Once the pan is almost dry, add one ladle-full of hot stock (about 1/3 - 1/2 cup). Continue stirring until stock has absorbed. Repeat this process for 20 - 30 minutes, or until rice is al dente (soft and chewy, but not crunchy). If stock runs out before rice is cooked through, begin using hot water (NOTE: how much liquid to use will depend on several factors, including the heat on your stove, the type of rice you are using, and your own preference. Taste frequently after 20 minutes and stop when you like the texture). • To finish, stir in pepper, lemon zest, parsley, parmesan cheese, and salt (if needed). Serve immediately in warm bowls, topped with additional fresh parsley and cheese. (NOTE: leftovers are best reheated in the microwave.
