You will love this beef shawarma recipe. It's the best i've ever made. The meat is super tender, flavorful and so good. It's a crowd pleaser. • You will need: • 2 pieces of flank steak/ 4 pounds total. • For the spices and marinade: • 1 tbsp salt • 1 tbsp coarse black pepper • 1/8 tsp nutmeg • 1 tsp paprika • 1/2 tsp cardamom • 1 tsp ginger • 1 tsp garlic powder • 1 tsp onion powder • 1 tsp cumin • 1 tsp coriander • 1 tsp baking soda • 1/4 cup white vinegar • 1/3 cup vegetable or olive oil • you will need 1 onion • For the toppings: • 1/2 large sweet onion sliced thinly and mixed well with 2 tbsp of sumac spice. • 2 roma tomatoes sliced • cucumber pickles sliced • tahini sauce; mix 1/2 cup of sesame tahini with the 2 tbsp of fresh lemon juice, 1/2 tsp salt, mix well then add water gradually until desired consistency. • I also baked fresh wrap bread. Let me know if you need the recipe. • PREPARATION: • The first thing you need to do is remove some of the extra fat from the flank steak if any. Cut the flank into 8 equal smaller pieces. • Add the spices, baking soda, vinegar and oil to the meat and rub it on all sides very well. • If the meat is thicker on one side, try to slice the thick part. • arrange on a vertical skewer or pan starting with the biggest pieces and ending with the smaller ones. Add an onion on top to secure the meat and place in the fridge for 4 hours uncovered to marinate, You can also leave overnight. • When you're ready to cook, take out of the fridge and plce on the counter top for 1/2 an hour before placing in the oven. Bake or roast at 385 °F for 1 1/2 hours or until internal temperature is 160 °F. You can cook more if you prefer it to be medium well. • Take out of the oven, wait five minutes then slice. If you like the meat edges to be crispy, you can put it back in the oven after you slice the first layer all around, same temperature for ten more minutes.
