SARDINIAN CULURGIONES (DUMPLINGS) filled with a rich and flavourful potato, mint and pecorino filling 🥔🥟🇮🇹 • SEMOLINA DOUGH • 300g semolina flour • 150ml room temp water • FILLING • 1 garlic clove, finely minced • 2 tbsp olive oil • 500g red potatoes • 10 mint leaves, finely chopped • 70g finely grated pecorino cheese • Salt, to taste • TO SERVE • Homemade Italian tomato sauce • Freshly grated pecorino cheese • Fresh basil leaves • To make the dough, mix semolina and water together then knead for 10 minutes until smooth. Wrap and rest at room temperature for 30 minutes. To make the filling mix garlic and olive oil together. Boil potatoes, peel and mash. Add the garlic oil, mint, pecorino cheese and salt. Mix until combined. Roll out the pastry until 2mm thick and cut round wrappers 8cm in diameter. Fold the culurgiones then boil in salted water for 5 minutes.
