Vegan Spanish Style Cod Fish

This recipe is a classic in Mexico and Spain. It has a unique flavor and I could recreate it using cabbage instead of fish. It is a true vegan delicacy! Besides being cruelty free, you don't have to worry about sharp bones yucky cartilage. I couldn't get enough of this dish when I made it. • Ingredients: • 1 cup cooking olive oil • 1 garlic head, peeled, finely chopped • 1 piece onion, chopped • 1/2 cup almonds, peeled, chopped • 10 medium Roma tomatoes • 8 cups cabbage, shredded • salt to taste • 1 cup parsley, chopped • 12 petite potatoes, boiled • seedless olives to taste • 2 tbsp capers, chopped • Procedure: • Heat up a half a cup of the olive oil on medium fire and fry the garlic in it. Make sure it doesn't get burned. • When it's lightly golden brown, turn the fire off. Set aside. • Heat up the rest of the olive oil in a big pot. • Sauté the onion, add the almonds. • Blend the Roma tomatoes thoroughly. • When the onion is cooked, add the tomatoes. • Let everything boil on medium fire while stirring constantly. • When the sauce has changed color, annex the fried garlic. • Slowly, put in the shredded cabbage and stir. If it looks like it's getting dry, don't add more. You may not need all of it. • Let it boil on medium fire until the cabbage is cooked. • Add salt to taste. • Annex the chopped parsley. • Adjoin the petite potatoes, the olives, and the capers.
