Two challenges when you go to split the hind quarter off a bull or buck while doing the gutless method: 1. You don't want to puncture the guts, but they are pushing against your knife. 2. If you hit the femoral artery on a fresh animal, you can't see where you are going due to blood. The solution is to first come in along the hip bone from the rear of the animal until you hit the ball joint. Pop the joint and push the quarter down so you have more space and don't have to worry about the guts.
