Moreover, it's a hassle to feed our kids. Even if you give your kid's favorite dish in their lunch box the lunchbox is never empty. • So, today in this video we'll make some crispy Sambhar Vadas or Medu Vada with Sambhar. So, let's begin with the recipe: • INGREDIENTS: • For Making Vadas: • 1. Urad Daal: 1.5 cups • 2. Rice Flour: 3 tbsp • 3. Hing: 1 tsp • 4. Ginger: 1 inch • 5. Green Chilies: 2 • 6. Curry Leaves: 10-12 • 7. Coriander Leaves: 2 tbsp • For Making Sambhar: • 1. Toor Daal: 1.5 cups • 2. Onions: 1 (big size sliced) • 3. Tomatoes: 2 (big size) • 4. Garlic Cloves: 8-10 • 5. Mustard Seeds: 1 tbsp • 6. Dry Red Chillies: 2-3 • 7. Curry Leaves: 10-12 • 8. Sambhar Masala: 2 tbsp • 9. Hing: 1 tsp • 10. Tamarind: 2 tbsp • 11. Veggies: of your choice (cut into small pieces) • METHOD: • For Making Vadas: • 1. Wash and soak the Urad daal for 4-5 hours. • 2. Take a grinder and add the urad daal. You can also add the green chilies and ginger while grinding the daal or chopped them and add them later. The choice is yours. • 3. Make a smooth paste of the daal using 2-3 tbsp of water. Do not add too much water otherwise, we won’t be able to shape our vadas. • 4. Add rice flour, salt, hing coriander leaves, and curry leaves. Beat this mixture until it becomes light and fluffy. • 5. Once done keep the batter aside. • For Making Sambhar: • 1. Soak the tamarind in sufficient amount of water so that we can make a pulp out of it. • 2. Pressure cook the toor daal with garlic cloves, tomatoes, salt and turmeric powder for 3-4 whistles. • 3. Heat oil in a pan and add mustard seeds, hing, dry red chilies, curry leaves and let them crackle. We will now add the veggies: carrot, cauliflower and green beans. The logic is the vegetables which take more time to cook add them first. • 4. Add the finely chopped onions and let them cook for a minute. • 5. Next goes in the drumsticks and brinjal. Cook them for a minute. • 6. Add the bottle gourd or lauki and cook everything for another 2-3 minutes. • 7. It's time to add the boiled daal. Add water as per your choice. The consistency of the sambhar is totally one’s personal choice. • 7. We will now add the sambhar masala, cover the lid and allow the sambhar to boil for 2-3 minutes. • 8. Once done add the tamarind pulp and again cook the sambhar for a minute. Finally, our sambhar is ready. Switch off the flame. • For Frying the Vadas: • 1. Heat oil in a pan on medium heat. • 2. Soak your hands in water. Take sufficient amount of daal mixture in your hands and make a hole in the centre. Finally, drop the vada in the oil carefully. (You can use both of your hands if required. The trick is to wet your hands properly while making the vadas this allow the vadas to shape properly and slip easily in the oil. But be careful the oil can splutter because of water) • 3. Fry the vadas on medium heat until golden in color. Once done take them out on a plate. • 4.
