Café de Olla is a delicious Mexican coffee that is traditionally made in an olla de barro, which is an earthen clay pot. But even if you don't have one, you can make it in a saucepan and still enjoy this sweet, cinnamon and spice flavored coffee hot or cold. Read on for the recipe, and if you're ever in Arizona and you're interested in the restaurant that inspired me to make this, here's info on that, as well: • Alebrijes Cafe Grill • 4900 N. B • Litchfield Park, AZ 85340 • https://alebrijescafegrillaz.com • Café de Olla • 6 cups of water • 1 8oz. cone of piloncillo (this may be too sweet for some, so start with 6 ounces and taste from there.) • 2 cinnamon sticks • 2 cloves • 1 star anise • 12 tsp of ground coffee (not instant) • Pour water into clay pot or saucepan and place on stove top over medium high heat. Drop in piloncillo, cinnamon sticks, cloves star anise, and stir occasionally as water becomes infused with spices and piloncillo dissolves. This will take about 15 minutes. Bring to low boil, then add in ground coffee and mix. Cover with lid, turn off burner, and let steep 5-10 minutes. • Use a fine mesh strainer lined with cheese cloth to prevent coffee grinds from ending up in your cup while serving.
