EASY at home Kimchi

While it may stink up the house my mom complains, she loves the taste! • This is not a traditional recipe. With my first test batches I used the recipe I use is from the “Cook Korean” book by Robin Ha. Traditionally people say to use tiny salted fermented aka Saeu-jeot, but having grown up in Bangkok, I added a Thai twist by adding fermented shrimp paste and a Thai brand fish sauce. I also use honey/coconut sugar, but you can just use sugar if you prefer :) • Ingredients: • 2 large Napa cabbages • 1/3 cup kosher salt • 4 green onions (all of it except the very end where the roots are; the white part is good!) • Fresh ginger (about 2 tablespoons) • 10 Cloves of garlic peeled • 1-2 peeled carrots • 1 large daikon radish • 3/4 cup Korean red chili flakes • 5 tbsp fish sauce (Use a Thai brand if you can) • 4 tbsp fermented shrimp paste • 2 tbsp honey or coconut sugar (plain sugar can be used as a alternative) • Instructions: • 1. Cut the Napa into quarters (lengthwise) then cut into bite-sized pieces (feel free to keep it intact, I just it for convenience) • 2. Massage the kosher salt into the rinsed Napa cabbages, then set aside for 40 minutes to wilt. • 3. While waiting, chop the green onions, fresh ginger, garlic, peeled carrot, and daikon radish. Julienne them or use a food processor if preferred. • 4. Prepare the paste by mixing Korean red chili flakes, fish sauce, honey, and fermented shrimp paste. Add the chopped green onions, garlic, ginger, carrot, and radish, and mix thoroughly. • 5. Rinse the wilted Napa cabbage with cold water one or two times. Squeeze out all the water and place the cabbage in a large mixing bowl. • 6. Wear gloves or use bare hands to mix the cabbage with the prepared paste, ensuring all the cabbage pieces are well coated. • 7. Transfer the kimchi to a clean, pressure-safe jar. Let it ferment for 1-3 days, depending on the weather (1-2 days for summer, 3 days for colder weather). Enjoy your homemade kimchi! • Simple, healthy, and budget-friendly.
