This is an incredibly easy recipe for Peruvian Beans. No soaking of these beans is required. I learned how to make these beans from a Mexican neighbor, but I modified it. • Peruvian beans are sold in huge bins here in the United States. You don't have to live in Peru to enjoy them. So we do it our way, and the results are fantastic. • These dried beans triple in size when they're done. Peruvian beans require no soaking whatsoever, but they do require a very low heat when you are cooking them. When they are done, you will know because they are firm, but tender. They are very creamy and melt in your mouth like butter. • Peruvian beans can be used in place of Pinto beans for any recipe. I prefer Peruvian beans to Pinto beans because Peruvian beans do not break. • Beans are a low glycemic index food, and qualify for a Phase 1 South Beach or Phase 2 Atkins Diet Program.
