I made some pasta with quick tomato sauce. I cook the pasta in just enough water to cover it so the pasta water is extra starchy and emulsifies the sauce much more nicely. The sauce is just garlic, dried oregano, and red chili flakes sauteed in olive oil with some crushed tomatoes added. I add some butter just because. • Finish the pasta in the sauce with a splash of the starchy pasta water and a little fresh olive oil, then add some parmesan and basil off heat (you can add the parm on-heat but there's some risk that it'll end up clumping. • This is a pretty classic way to finish your pasta in sauce.
