This Ding Dong Cake is a rich, moist chocolate cake with a creamy filling and chocolate ganache spread over the top! So easy to prepare, you’ll love it! • INGREDIENTS • For the Chocolate Cake: • 4 large eggs, at room temperature, divided • ½ cup (120g) granulated sugar • ½ cup (100ml) water • 1 cup (130g) all-purpose flour • 1 teaspoon baking powder • 2-3 tablespoons cacao powder • ¼ teaspoon salt • For the Milk Syrup: • ⅔ cup (200ml) whole milk • 2 tablespoons powdered sugar • For the Cream Filling: • 2 large eggs • ¼ cup (60g) sugar • ½ can sweetened condensed milk • 1 teaspoon pure vanilla extract • 3 tablespoons all-purpose flour • 1 cup (250ml) whole milk • 1 ⅛ cup (18 Tbsp or 250g) unsalted butter, at room temperature • For the Ganache: • 3 tablespoons cacao powder • 2 tablespoons sugar • 3 tablespoons whole milk or sour cream • 3 tablespoons butter • PREPARATION • Make the Chocolate Cake. • 1. Preheat the oven to 350°F (180°C). Butter the sides of a 9-inch (22 cm) cake pan and line the bottom of the cake pan with parchment paper; set aside. • 2. In a mixer bowl, whisk the egg whites and ¼ cup of sugar until stiff peaks form. • 3. In a separate medium bowl, whisk the egg yolks with remaining ¼ cup of sugar, add the water and mix well. • 4. Stir the egg whites into the yolk mixture. • 5. Add the sifted flour, baking powder, cocoa powder and salt and mix well with spatula. • 6. Pour the batter into the prepared pan and bake for 30-40 minutes, until a cake tester or toothpick comes out mostly clean (not wet). • 7. Cool in the pan for 30 minutes, then turn it out onto a cooling rack and cool completely. • 8. Divide the chilled cake with a knife into two equal parts. • Make the Milk Syrup. • 1. In a medium bowl combine powdered sugar and milk. • Make the Cream Filling. • 1. In a saucepan, mix eggs, flour, sugar, vanilla, condensed milk and whole milk with a whisk. Bring to a boil, stirring constantly, until thick. Remove from the heat and let cool. • 2. In a mixing bowl, beat the butter and the cooled milk mixture until smooth and fluffy. • 3. Place one of the cakes back into the pan, drizzle with milk syrup, spread filling over the cake and top with the other cake layer, soaking it with milk syrup. • Make the Ganache. • 1. Combine all ingredients in a saucepan over low heat. Cook, stirring until melted. • 2. Remove from heat and cool to room temperature. • 3.
