Turkey Meatballs with Chickpea Beetroot • Or as I like to call them, Beet Balls! • I came across a recipe for turkey burgers recently, that I ended up swapping out quite a few ingredients, that I didn't have in the cupboard at the time. • This was the result, and if I do say so myself, I am glad to have made its acquaintance. • In my search for low calorie food, this one is a winner, as you can see with the breakdown below: • Serving of 6 beet balls • Calories: 213g • Carbs: 12.3g • Fat: 3.3g • Protein: 33g • Ingredients • 500g Turkey Mince • 1 tin of Chickpeas • 2 Beetroots, cut in half • 1tsp Fennel Seeds • 1tbsp Parsley • Directions • Pre-heat your oven to 180C. • 1. Add all of the ingredients in to a food processor, and then blitz down into a cohesive lump of meatball dough, for want of a better word. • 2. Roll out 24 beet balls and place them on a baking tray. • 3.
