Chill in refrigerator for at least 30 minutes or so. Enjoy! • Rub: • 5 tablespoons light brown sugar • 5 tablespoons white sugar • 5 tablespoons of paprika (I used smoked paprika) • 5 tablespoons of sea salt • 1 tablespoon of granulated garlic • 1 teaspoon of granulated onion • 1 tablespoon of cracked black pepper • 1 teaspoon of white pepper • 1 teaspoon of cayenne pepper • 1 tablespoon of chili power (I used a south west spice) • 1 teaspoon of Old Bay seasoning • Directions: Mix well, and apply to pork. I use a mustard base on my pork so the seasonings will adhere well. • East Carolina Sauce • Ingredients: • 1 ½ cup of apple cider vinegar • 2 tablespoons of molasses • 4 oz of unsalted butter • 1 ½ tablespoons of ground dry mustard • Cayenne pepper to taste • 1 tablespoon Worcestershire • 1 cup dark brown sugar • ½ teaspoon salt • Black pepper to taste • 2 teaspoons of corn starch • Directions: • In a saucepan over medium heat, combine the cider vinegar, molasses, butter, dry mustard, cayenne and black pepper, salt, Worcestershire and brown sugar. Bring to a boil, Mix corn starch with the 2 teaspoons of water until smooth. Slowly add into the sauce, and stir for around a minute as the sauce is still boiling. This will thicken the sauce just a little. You want a thin sauce, and not thick like most BBQ sauces. Let cool, and spoon over pork. • Music courtesy of Audio Network
