I’m using a multi-layer pan made of stainless steel and aluminum, which works perfectly for this method and, with the right care, prevents sticking. • We’ll go over how to heat the pan to the correct temperature and use an oil with a high smoke point, then proceed with the cooking process: starting with high heat, then lowering it and covering the pan for a slow cook that leaves the carrots tender and flavorful.
