Regular activation of autophagy, which can be induced through fasting and spermidine supplementation, helps reduce inflammation, regulate lipid metabolism, and improve mitochondrial health. Spermidine, a naturally occurring polyamine, has been found to promote autophagy, reduce inflammation and oxidative stress, and protect against age-related diseases. With age, autophagy declines, partly due to lower levels of spermidine, especially in the immune system. This reduction in autophagy contributes to aging and health issues. • Both fasting and spermidine work by activating longevity pathways like AMPK and inhibiting mTOR, a nutrient-sensing pathway that accelerates aging when overactive. Including these foods in a diet, especially in combination with fasting, can maximize the benefits of autophagy and improve overall health. • Mushrooms, in particular, are not only rich in spermidine but also contain other bioactive compounds such as chitin, which has prebiotic effects that stimulate the growth of beneficial gut microbiota and inhibit pathogens. Chitin and its derivative, chitosan, have been shown to possess various health-promoting properties, including anti-inflammatory, antioxidant, and antimicrobial effects.
