Creamy Pea Soup Recipe • #peasoup #creamsoup • 📜 Ingredients for 8 servings: • 500g (1 lb) peas, fresh or frozen • 500ml (16 fl oz) chicken broth • 150g (5 oz) leek • 1 medium onion • 80g (3 oz) butter • 200ml (7 fl oz) half-and-half • salt, pepper • bread for croutons • Chop the onion and the leek - they should be of the same volume. • Heat the butter in a pot over medium heat until the butter melts. • Add the onion and the leek, let simmer, stirring occasionally until softened, 5 minutes. • Stir in the peas. Pour in the broth so that the liquid almost covers the peas. • Add salt and pepper, bring to boil very quickly and cook for 1 minute. • Pour into a blender and blend the soup until smooth. Pour in half-and-half while blending. • Finally, pour the soup through a strainer to remove lumps. • Cut the bread into cubes. Add 1 tbsp butter in a pan and cook the croutons for 3 minutes until golden brown. • Serve the soup with a few croutons on the top.
