Now I know that a lot of people equate quick and easy with drive through and take out. That is not often the case in my house though, when we have a number of our own fast food recipes at our fingertips! • • This is one of those recipes. We love fish, I don't however love frying fish or anything for that matter. I hate dealing with the deep fry! I hate the mess and I hate the smell that tends to linger in my house for days afterward. So this is a wonderful alternative and you can whip it up in a snap! • • Mixing the bread crumb with the corn meal give this a nice crunch and spraying with the non stick spray allows this fish to take on the taste and texture of having been deep fried. The benefits of making your fish this way are many. First you don't have to deep fry! Second, you don't have the calories from deep frying and third, you have a simple and easy meal that you can literally throw together in about 10 minutes, bake for 20 and have dinner on the table in 30 minutes or less! Rachel Ray eat your ever lovin' food network heart out! • • You don't have to use the buttermilk, I just usually have this on hand, you can use plain milk, evaporated milk, soy milk, almond milk or even just water! You can also use all bread crumb or all corn meal.
